Mexican Turkey Burgers

My husband does all our cooking (Silver is a GREAT dishwasher, but she is NOT a cook!!)
When I got home this evening, he had this waiting for me! YUMMY!

He took about a pound of ground turkey, then added chopped mushrooms, cilantro, red onion, bell pepper, diced garlic. Stirred in 1/4 cup of fat-free cheese and a couple of tablespoons of lite mayo and a tablespoon of mexican (fajita) seasoning. Then he grilled the patties.
He ate his on those sandwich thins with a little avocado slice.
I cut my patty in half, topped it with a spoonful of salsa, then rolled each half up in a leaf of romaine lettuce.

OH SO GOOD...... :D

We will try it this week. Sounds great. Burgers are the one thing that Mike keeps craving. Any idea on a pizza? Keep em coming :D

Pizza? LOL Well, I'll ask my "chef" ;)

I was amazed that wrapping that burger in a leaf of romaine made it "feel like" I was eating a burger with the bread (if that makes sense, hahaha)

I got those low carb totilla's and then I cook it in the oven for a few minutes, or broil it to get it crunchy, then I top it with either salsa, or the classico speghetti sauce is the lowest carb sauce out there. (that i've found).. then add the cheese, some pepperoni, black olives, garlic.. use a pizza cutter and slice into fours.. YUM.

i've also gotten a slice of pizza with everything on it, and just eaten the top. really if it's mostly cheese and veggies, you'll be ok.

At this time I don't believe we are allowed bread yet. I'll have to ask Dr. Baird on Monday when we go to WEIGH in!!!! Excited!!!!

YUM on the pizza alternative -- I'll try that as soon as I'm allowed breads!

Hey I have a question -- are frozen veggie burgers (like the MorningStar Farms selections) "legal"?
